Ingredients: 4 oz pancetta diced 3/4 cup, Diced salami 3/4 cup 1 chopped onion 1 carrot peeled and chopped 1 celery stalk chopped 2 tbsp chopped sage 3 tbsp olive oil 6 chopped cloves garlic salt/pepper 1/4 tsp crushed red pepper flakes 3/4 cup dry red wine, 1 28 oz can dice tomatoes 1/2 cup chopped parsley 1 lb stubby shaped pasta cooked al dente,1 cup pasta water held in reserve, 2 cups whole milk ricotta.

Directions:In a food processor pulse pancetta until almost pasty add salami onion carrot celery and 1 tbsp sage pulse until finely chopped. In a large saucepan or dutch oven over med heat 1 1/2 tbsp oil add meat and veggie mixture add 1/2 tsp salt cook about 10 min. spread evenly bottom of pot-stirring occasionally until a thick fond has formed at bottom of the pot about 8 min longer. add garlic and red pepper flakes add the wine and lower heat to a strong simmer Scrape the bottom of the pot to dissolve the fond until liquid is gone and mixture pasty3-4 min. Add tomatoes and cook 15 min on simmer stirring. add black pepper sage 1/3 cup parsley stir in Reserve 3/4 cup of sauce pour the pasta in pot stirring until sauce well married to sauce2 min. Add enough pasta water to loosen sauce adjust salt am\nd pepper. In a bowl beat ricotta 1/2 tbsp oil salt and remaining parsley Layer mixture and ricotta mix in thirds in a warm serving dish. Pour over the reserved sauce and dot with ricotta on top, Serve at once |

Notes: Salami and pancetta boost the flavor. Layer the mix to form a pie effect. It is necessary to grind the pancetta before adding other ingredients, allow the pancetta mix to mimic ground meat.
