1 can black-eyed peas
1 can black bean, drained
1 can pinto beans, drained
1 can shoepeg corn, drained
1 cup chopped celery
1 chopped green pepper
1 small bunch green onions chopped
1/2 cup cilantro
1 tsp salt
½ tsp pepper
1 T water
¼ cup cider vinegar
½ cup vegetable oil
1 cup sugar

Directions:
Directions:
Add celery, pepper, green onion, and cilantro to drained veggies. Mix together and bring to a boil the salt, pepper, water, vinegar, oil, and sugar. Cool slightly and pour over veggies and store in the refrigerator. Make a day ahead and serve with tortilla chips or corn chips.
