Using light or amber syrup

Use a high sided pan and bring syrup to a boil 230º-235º and try to be precise.
Do Not stir while boiling.
If starts to foam to much add a small pad of butter.

Cool to room temperature.
You can do this by partially filling your sink with cool water and placing pan in it. constantly adding cool water.
Don't go over edge with water and do not agitate liquid while cooling.
Should be room temperature when you can hold your hand over mixture and feel no heat rising from it.
Do not over cool as it will be difficult to stir.

Once cooled begin stirring syrup on sides and bottom of pan and continue until cream is light in color and it should be come shiny then dull again as you finish.
If it becomes hard and chunky let it sit for a few hours with a damp towel over it and package.
