4 Skinless Chicken Breasts (Diced)
1 Tbsp Moroccan Spice (Marrakesh Spice Blend)
1 Onion (Finely Sliced)
4 Tbsp Butter
1 C Jasmine Rice
12 Dried Apricots (Golden or regular raisins can be substituted)
3 C Chicken Stock
1 can Chickpeas (Drained and rinsed)
Fresh Parsley as garnish

Directions:
Directions:
Coat chicken with spices. Sauté onion in butter until onions are soft, then add chicken and sauté a few minutes more. Add rice, apricots, chicken stock and chickpeas and stir until well mixed. Cover and simmer on low until rice is done (approx 20 minutes). Garnish with chopped parsley and serve.

This is very flavorful and makes a nice warm dish to enjoy on a cool night.
