1/4 C olive oil
2 Tbs apple cider vinegar
3 cloves garlic
1 tsp dijon mustard
1 tsp salt
1/2 tsp pepper
2 pounds boneless, thighs (6-8) ** or use breast 3-4

Directions:
Directions:
Heat to 425º
Place olive oil, vinegar, garlic, mustard, salt & pepper in a mini chopper. Process continuously until thick & creamy, about 30 sec. Transfer to large bowl and add the chicken mix well to coat.
Transfer the chicken to rimmed baking sheet & arrange in a single layer. Roast until chicken is lightly browned , 165º
