1 med yellow onion, diced med
1 small red pepper, diced
2 cloves garlic, minced
1 lb boneless chicken breast
1 tsp salt
1/2 tsp pepper
2 Tbs vegetable oil
2 Tbs tomato paste
1 tsp ground cumin
2 C rice (white or brown or cauliflower)
1/2 C chicken broth
lime wedges

Directions:
Directions:
In med bowl- place onion, pepper, & garlic. Cube chicken breast, pat dry & season with salt & pepper.
Heat large skillet over med high heat until shimmering. Add chicken & spread into an even layer. Cook about 3-4 min (cooked through) and set aside.
Add onion, pepper & garlic to skillet. Cook, stirring occasionally until softened about 5 min. Add tomato paste & cumin stir to coat the veggies & cook until darkened in color, about 2 min.
Stir in 2 C rice & 1/2 C broth & return the chicken to the pan. Cook until heated through about 3 min.
Serve with lime wedges
