Ingredients: 1 chopped scallion 1 chopped onion 1 1-inch piece chopped ginger 3 chopped cloves garlic 5 tbsp Dende oil 2 tbsp olive oil 1/4 cup chopped cilantro 1 1/2 lb fresh haddock cod or striped bass cubed into 2-inch pieces 1/2 cup chopped green and 1/2 cup chopped yellow bell pepper . 1 1/2 cup fish juice 1 cup coconut milk 2 tbsp tomato paste 1 tbsp lemon juice 1/2 can be drained and diced hearts of palms. 2 plum tomatoes diced.

Directions:IN a bowl put 1/2 scallion 1/2ginger 1/2 onion and 1/2 garlic. add 2 tbsp dende oil and olive oil and 1/2 cilantro Add white fish mix cover and refrigerate for 3-4 hours. Remove 30 min before cooking. Set oven to 350 In a casserole dish on med heat remaining 3 tbsp dende oil add remaining scallion, onion, garlic green, and yellow peppers cook a minute or 2 add fish stock bring to a boil add coconut milk and tomato paste .simmer for 10 min. In a 10-inch baking dish spread fish. add lemon juice salt and pepper, roast for 10 min. until fish opaque. Now add fish to the sauce and pour off baking juices also into the sauce. Cover and cook 5 min. low heat. Add hearts of palm tomatoes cook another 2-3 min. season with salt/pepper |
