1 pkg dry yeast
1 c. warm water
1 Tbsp. Sugar
1 ½ tsp. Salt
1 Tbsp olive oil
2 ¾ c. sifted flour

Filling
12 oz. Sliced Mozzarella
1 # Italian Sausage
1 - 12 oz can crushed tomatoes
1 - 8 oz can tomato sauce
1 - 6 oz can tomato paste
2 tsp Oregano
1 Tbsp Fennel seed
½ c. grated parmesean
1 tsp. Italian spices
¼ tsp. Garlic powder

Make dough. (I use my Quisinart) Put the warm water into bowl, sprinkle
yeast on the water and let it sit for a minute to soften. Add the rest of the
Ingredients. Mix well. Put in oiled bowl, cover and let rise 1 hour. Punch
Down, divide in two and place in 2 – 2” deep oiled 10” pizza pans. Rim
should be 1” high. Let stand for 20 minutes while pre-heating oven to 450
degrees. Pre cook sausage and drain grease.

Pre-bake crust at 450 for 10 min. Make filling. Reduce oven temp to 350 F.
Assemble pizza (mozzarella on bottom, sausage in middle, tomato sauce
and seasoning, then Parmesan on top). Bake at 350 for 15 more minutes.

Trish Paugh and I collaborated on this recipe. She lived at 822 Oakley but moved at Halloween, 1983 to Kansas City.
Note: I’ve gotten lazy and usually just use a good thick jar of spaghetti sauce
instead of making all the tomato sauce and seasoning.
Variations: Instead of sausage, 1) layer fresh spinach on top of the sauce,
then Artichoke hearts and Feta cheese instead of Parmesean. 2) Sauted
sliced mushrooms, sliced red peppers and onion on top of the sauce then
spread ¼ cup pesto or use pesto on top of the mozzarella instead of the red
sauce. Try different cheeses too. Be creative with toppings. Everyone
seems to like the pesto addition.
