Pie- 1/2 cup dry white bread crumbs 1/4 cup crushed potato chips 1/4 cup grated parmesan cheese 1/4 tsp paprika 1 tbsp sherry 2 tbsp melted butter salt. Filling- Butter for dish 1 lb cooked lobster meat (2 1 1/2 lb cooked lobsters shucked) 2 cups clam or fish juice 2tbsp butter 2 tbsp flour 3 tbsp sherry 1/2 tsp paprika 1/2 tsp tomato paste 1/2 cup heavy cream salt pepper

Pie- Ina bowl combine breadcrumbs chips parmesan, butter paprika and sherry salt stir well set aside. Filling- Set oven to 350 degreesbutter a 2 qt baking dish fill wth lobster meat In a large sauce pan bring clam juice to a boil and pour in a bowl. In the sakme pan melt butter whisk in flour cook on low heat whisking continously 2 min. Now whisk in clam juice until mixture is smooth add sherry pairika tomatoe paste and cream cook whisking bringing to a boil Lower heat heat and simmer 15 min.Pour cream sauce over lobster sprinkle with crumb topping Bake 25 min. until sauce bubbly at edges.

Serve in a semi oval dish with a cooked carrot strip and a cooked asparagus placed on top with a wedge of lemon.
