Chicken Pinot Grigio Soup Recipe

3 T olive oil
1 lb chicken thighs, diced 1/2" pieces
4 carrots, peeled and diced 1/2" pieces
1-2 leeks, trimmed, cut in half, sliced and washed
2 ribs celery, cut into 1/4" pieces
1 red pepper, diced 1/2" pieces
1 T garlic, minced
2 tsp smoked paprika
2 tsp basil, dried
1 tsp real salt, or pink salt
1 tsp black pepper, freshly ground
1 1/2 C pinot grigio wine
1/2 lb smoked chicken paprika sausage, cut in half and sliced
2 tsp aminos
8 C chicken stock, low sodium
1 1/2 lb yukon gold or yellow finn potatoes, peeled and diced 1/2" pieces

Directions:
Directions:
Heat olive oil on med high in a medium sized pan. Add next 10 ingredients, up to the wine. Saute 8-10 min until veggies and chicken are lightly browned. De-glaze pan with wine, and reduce by half. Add sausage, aminos, and stock. Bring to a simmer then add potatoes, cover and simmer approx. 25 min or until potatoes are tender.

Went to a cooking class with Aunt Toni Temanson, and my cousin Sheila Comin. We got to taste all the yummy things the chef/owner made at Once Upon a Thyme in Chehalis. This was my favorite recipe that i have made, and kept since that class.
