3 lbs. red potatoes, cut into 1" cubes
½ cup olive oil
1 tbsp. red wine vinegar
3 tbsp. lemon juice
1 tsp. grated lemon peel
2 tbsp. minced fresh basil
2 tbsp. minced fresh parsley
¾ tsp. salt
½ tsp. pepper
1 small onion, chopped (or green onions, sliced)

Directions:
Directions:
Place potatoes in large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 - 15 minutes or until tender.

Meanwhile, in bottom of a large bowl, whisk the oil, vinegar, lemon juice, lemon peel, herbs, salt, and pepper.

Drain the potatoes and add to bowl; toss well to coat with vinaigrette. Serve warm, or chill until serving.

This is a really tasty salad that isn't loaded with mayonnaise.
