3 chicken thighs
3 chicken legs
1/2 lb fresh sliced mushrooms
3 sm onions, peeled & quartered
2 cloves garlic, minced
2 C chicken broth, low sodium
1 C dry red wine
salt & pepper

Directions:
Directions:
Combine broth & wine in small saucepan, and bring to boil. Reduce heat, cook uncovered until reduced to one cup. Set aside.
Sprinkle chicken with salt and pepper. Spray pan with olive oil spray, brown chicken over medium heat until almost done. Set aside.
Coat pan with olive oil spray again, and add onions, garlic, and mushrooms. Cook until tender. Add liquid, and chicken. Simmer until tender and done.
