1 lb Chicken breast, boneless skinless
1 (15 oz.) can Black beans
1 C Corn, frozen kernels
1 (14.5 oz.) can Rotel diced tomatoes and chilies
1 Yellow onion, medium
2 C Chicken broth, low sodium
1 (10 oz.) can Enchilada sauce, (I prefer green)
1 C Brown Rice
1/2 tsp Black pepper, ground
2 tsp Chili powder
1/2 tsp Salt
2 tbsp Olive oil
1 tsp Cumin
1 cup Mexican blend cheese
Sour Cream
Tortilla Chips

Directions:
Directions:
Brown chicken with onion then add rest of the ingredients to the pan except cheese, sour cream, and chips. Heat to boiling, then simmer on medium until rice is tender.
Serve a bowl with the cheese, and sour cream as garnish on top. Serve chips on the side for dipping, or crunching up on top. Optional garnish with diced tomatoes, sliced olives, and green onion.
