3 lbs of beef (chuck cut in 1½” cubes)
3 lbs carrots, sliced thin
2 cups white wine
2 onions, finely chopped
2 bay leaves, some thyme,
Salt and pepper

Directions:
Directions:
Salt and pepper the meat; then brown the meat in a heavy casserole. When browned remove the meat and put aside. Add onions and lower the heat; add about 1/2 cup of wine. Place meat back into the casserole dish and after 1 hour add the carrots, the rest of the wine, thyme and bay leaves. Cook for another hour or until meat is tender.

Serve with roasted potatoes.
