Ingredients: 2 ½ c. whole-wheat flour 1 ¾ c. white bread flour 2 t. fine sea salt 1 ½ t. yeast 2 t. honey 1 ¼ c. warm water 1 T. sunflower seeds 1 T. pumpkin seeds 2 t. sesame seeds

Directions:1. Mix both flowers with the salt in a large mixing bowl. 2. In a small bowl, mix the yeast with the honey and half the warm water until smooth. Add the remaining water and mix to form a soft ball. Turn out the dough onto a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic. Add the sunflower and pumpkin seeds to the dough and knead for one minute. 3. Place the dough in a lightly oiled bowl, cover with plastic wrap and leave to proof for 1 to 1 1/2 hours. 4. Turn out the dough again and punch down. Divide the dough into two. Shape the dough into two batons. Spray or brush with water then roll the tops in sesame seeds until well coated, pressing in the seeds gently. Place on a lightly floured baking sheet, cover, and leave in a warm place for 30 minutes. 5. Preheat the oven to 375°. Bake on the center rack for 30 to 35 minutes until golden and crispy. Cool on a cooling rack. |
