3 raw boneless skinless chicken breasts
2 cans rotel tomatoes ( I use mild but you can use any kind )
1 medium onion,chopped
3 garlic cloves , minced
2 c water
1 (14.5 oz ) can 99% fat free chicken broth
1 tbsp cumin
1 tsp chili powder ( you can use more for spicier soup )
1 tsp salt
¼ tsp black pepper
1 bay leaf
1 ( 10 oz ) package frozen corn
1 can black Beans
2 tbsp chopped cilantro ( or to taste )

Directions:
Directions:
Combine all ingredients in a large slow cooker. Stir to combine. Cook on high 4 - 6 hours or low 6 - 8 hours.

Remove chicken from soup and shred. Remove bay leaf. Return chicken to soup, stir and serve.

You can garnish with tortilla chips, shredded cheese, and sour creams.
