Roast Chicken Recipe

5-6 lb roasting chicken
salt & pepper
1 large bunch fresh thyme
1 lemon, halved
1 head garlic, cut in half crosswise
2 Tbs butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2 inch chunks
1 bulb of fennel, tops removed & cut into wedges
olive oil

Directions:
Directions:
Preheat oven to 425º
Remove giblets, rinse inside & out of chicken. Remove excess fat & pat the outside dry.
Liberally salt & pepper the inside of the chicken.
Stuff cavity with thyme, lemon & all the garlic.
Brush outside with butter & sprinkle again with salt & pepper.
Place onions, carrots & fennel in a roasting pan.
Toss salt, pepper, 20 sprigs of thyme & olive oil spread around the bottom the pan & place the chicken on top.
Roast for 1 1/2 hours. Remove the chicken & veggies to a platter & cover with aluminum foil for ab out 20 min. Slice the chicken onto a platter & serve!
