4 C chopped onions
1/8 C olive oil
1/8 C minced garlic (2 cloves)
2 red peppers, large diced
2 yellow peppers, large diced
1 tsp chili powder
1 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
2 tsp kosher salt
2 28oz cans whole plum tomatoes in puree, undrained
1/4 C minced fresh basil leaves
4 splits chicken breasts (left over chicken- 3-4 cups)

Directions:
Directions:
Cook the onions in oil over med-low heat for 10-15 min, until translucent.
Add garlic & cook for 1 more minute.
Add the peppers, chili powder , cumin red pepper flakes, cayenne & salt.
Cook for 1 min.
Crush the tomatoes by hand and add to the pot with basil.
Bring to a boil then reduce the heat & simmer uncovered for 30 min. Stir occasionally
Add chicken to chili & simmer uncovered for another 20 min.
