Salad 1/2tsp whole coriander seeds 1/4 cup slivered almonds Juice of 2 limes salt pepper 2 tbsp veg oil 1 jalapeno seeded and chopped well 2 green apples cored and finely sliced Halibut - 1 cup water 1/2 cup quinoa 2 tbsp chopped chives grated rind of 1 lemon 1 tsp thyme salt pepper 1/2 cup flour 2 beaten eggs 2 lbs boneless halibut 2 tbsp olive oil 2 tbsp butter

Salad In a small skillet heat and toast coriander seeds shaking 3 mins remove from pan set aside crush the seeds add almonds to pan heat add seeds heat 4 min set aside. whish lime juice salt and veg oil stir in coriander almonds and jalapeno add apples taste to season. Halibut. Bring water to a boil add quinoa lower heat cover cook for 20 min. transfer to a bowl Add chives lemon pepper thyme. Place flour eggs and quinoa mix in 3 separate shallow dishes coat each piece of fish in flour then egg wash place on a clean plate in a large skillet heat olive oil add butter add fish for 4 min each side Place fish on top of micture sprinkle with chives and wedge of lime
