1/2 C shortening
1 C white sugar
1 Large Egg
1 C shredded zucchini
2 C all purpose Flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 C raisins or craisins

Directions:
Directions:
In a mixing bowl cream shortening, sugar and egg. Beat well. Stir in zuchinni and set aside. In a large bowl combine flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves. Add zucchini mixture to flour mixture and stir till combined. Add in raisins. Drop by tsp onto cookie sheet covered with parchment paper and bake at 375º
for 12 to 15 min or until brown. Cool for 2 minutes then remove and place on wire rack if you have one.
