8 oz. Vermont white sharp cheddar cheese
¾ cup Duke's Mayonnaise
2 - 3 t. pimento, diced
Freshly grated black pepper

Directions:
Finely grate the cheese either by hand or in a food processor. Fold together the cheese, mayonnaise and pimento in a mixing bowl. Transfer the mixture to your serving container and garnish with freshly grated black pepper. Chill. Serve with crackers for an appetizer or as a topping on burgers or vegetables. Pimento cheese sandwiches can be made with the bread of your choice and cut into fancy shapes for parties or spread on sliced bread to enjoy for picnics or lunch.

Pimento cheese is a southern staple. I prefer Cabot's Vermont Seriously Sharp Cheddar Cheese. No matter the brand you choose, it is important to finely grate the cheese. Duke's Mayonnaise is a must! No substitues allowed. Depending on your preference, you may add more or less mayonnaise than listed. The pimento can be finely diced or left in larger pieces and more may be added. Be sure to keep the pimento cheese chilled since it contains mayonnaise.
