2 cups self-rising flour
1 t. dried thyme
1 t. dried oregano
1 t. cayenne pepper
1 t. dried mustard
1 t. salt
1 t. black pepper
⅔ cup finely chopped pecans
1 cup milk
1 egg
10 -15 chicken tenders
Vegetable oil

Directions:
Directions:
In a medium bowl, combine the flour, thyme, oregano, cayenne pepper, mustard, salt and black pepper. Mix well.
Put half this mixture in another bowl.
Add chopped pecans to one of the bowls.
Wisk together milk and egg in a separate bowl.
Dip each piece of chicken in the flour mixture without pecans.
Then dip in the milk and egg mixture.
Finally dip the chicken in the flour mixture with pecans.
Repeat the process until all the chicken tenders have been dipped in each mixture.
In a large fry pan, heat the vegetable oil over medium heat and cook the chicken tenders until golden brown on each side. Drain and serve hot.
If there are any leftovers, chill and serve sliced over a salad.
