2 or 3 pkgs. frozen, chopped broccoli
2 eggs, beaten
1 can cream of mushroom soup
1 Tablespoon onion, chopped fine
1 cup cheddar cheese, shredded

Directions:
Directions:
Cook the broccoli according to package directions. Drain well. In a casserole dish, beat eggs and add rest of ingredients except the cheese. Blend in cheese last.

Bake uncovered at 350º for 30-45 minutes. Check casserole after 30 minutes. It is done when center is firm.

Optional: Casserole can be topped with bread crumb's or French's canned onion rings. Recipe can be doubled for larger crowd. It is also good with cooked, chopped chicken or turkey added.
