1 Tablespoon olive oil
1 small onion, chopped
1 stalk celery, chopped
1 carrot, chopped
1 clove garlic, minced
2-1/2 cups chicken broth
1 14 oz can red kidney beans, drained
1 14 oz can tomatoes
1 cup cabbage, chopped
1 cup cheese-filled tortellini
1/2 cup zucchini, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
1-1/2 cups fresh spinach
salt and pepper to taste
Parmesan cheese
1/4 cup red wine, optional

Directions:
Directions:
In heavy saucepan, heat oil over medium-high heat. Saute onion, celery, carrot and garlic until soft and fragrant, about 3 minutes. Add chicken stock, beans, tomatoes, cabbage, tortellini, zucchini, wine, basil and oregano. Bring to a boil.

Immediately reduce heat and simmer gently for 15 minutes. Add spinach and cook for a few minutes longer or until pasta and vegetables are tender. Season with salt and pepper to taste.

Pour soup into serving bowls, topping each bowl with Parmesan cheese.
