1 cup crushed pineapple, drained but reserving the juice
1 cup water
2 3 oz pkgs lime jello, can use sugar-free
1 cup mayonnaise, can substitute Greek non-fat, zero sugar yogurt
1 cup evaporated milk, shake well before opening
1 cup small-curd cottage cheese, can use fat-free
1/2 cup walnuts or pecans, chopped

In a 3-4 cup measuring cup, pour reserved pineapple juice. Add enough water to the juice to measure 2 cups. Transfer water/juice mixture to saucepan and heat to a boil. Add the jello to the boiling liquid and stir to dissolve. Remove from heat and allow to cool slightly.

In a mixing bowl, stir together mayonnaise and evaporated milk, combining until smooth (you can use an electric hand-mixer if you choose). Slowly stir in jello mixture until it is incorporated. Add crushed pineapple, cottage cheese and nuts.

Pour into 8x8 glass dish. Cover and refrigerate for at least 4 hours or overnight. When serving you can top with Cool Whip or leave plain.
