o 6 ears of fresh corn kernels, cut from the cob
o 2 tablespoons unsalted butter
o salt and pepper to taste

• In a large sauté pan over medium heat, melt butter. Add corn, salt and pepper. Simmer for 12-15 minutes, stirring frequently until corn is tender.

(Hint: If you have a bundt pan, place the cob in the center hole and strip the corn kernels with a knife. They fall directly into the pan without scattering around and you are set to go!)

This recipe comes directly from Rachael Ray's website, Rachaelcooks.com. I was looking for something to do with some fresh corn that was different and this take on traditional corn-on-the-cob may change the way you serve it from now on, but you have to try it first. We love corn-on-the-cob, but it can be messy and we both must floss after eating it. This is basically corn-off-the-cob that tastes great and the mess and flossing are eliminated.
