2 lbs haddock 2 oz. salt pork diced 2 sliced onions 4 large diced potatoes 1 cup chopped celery 1 bay leaf crushed and crumbled 1tsp salt 1 1 quart whole milk 2 tbsp butter fresh ground pepper

put haddock in a soup pot with 2 cups water and simmer 15 minutes, drain and reserve broth. check for bones and remove them. Saute salt pork in the same soup pork until crisp remove. in the same fats saute the onions until golden Pour in the reserved broth fish potatoes celery bay leaf salt pepper add some water to make about 3 cups of broth bring to a boil and reduce and simmer 30 min. Now add milk and butter simmer another 7 min . Serve sprinkled with pork and ground pepper.
