2 (10 oz) packages frozen chopped spinach
6 green onions, chopped
1 egg, lightly beaten
2 Tbsp melted butter
1 lemon, juice and zest
1 1/2 tsp Louisiana Hot Sauce
1/2 cup milk

Topping:
1/2 tsp dried dill
1 cup panko
1/2 tsp garlic powder
1 tsp salt
Extra virgin olive oil

Directions:
Directions:
Preheat oven to 350º. Lightly grease a small casserole dish.

In a medium saucepan, cover spinach with lightly salted water and simmer for 10 minutes. Drain in a fine sieve and push as much moisture out as possible.

In a medium bowl combine milk with egg, add green onions, butter, lemon juice, zest and hot sauce. Fold in spinach and put in prepared dish.

Combine panko with salt, dill, garlic powder and enough olive oil to moisten crumbs (approximately 1/3 cup). Spread over spinach mixture and bake for 30 minutes.

Serve with thin toasted bread slices, pita chips or vegetables.
