1/4 cup EVOO
1 cup Lactose-free milk
1 large egg
1 1/4 cup corn meal
1 cup unbleached all-purpose flour
1/2 cup Stevia
1 tablespoon baking powder
1/8 teaspoon salt

Directions:
Directions:
1. Heat oven or air fryer to 400º F
2. Add coconut oil to grease the bottom and sides of the loaf pan
3. In a large bowl, beat the EVOO, milk and egg with a wire fork or wisk untill well
blended. Add the cornmeal, flour, Stevia, baking powder and salt all at once: stir just
until the batter is moistened (batter will be lumpy). Pour batter into loaf pan and
spread evenly in pan. Smooth the top evenly.
4. Bake 25 minutes or until golden brown and a toothpick inserted in the center comes
out clean.
5. Serve warm with plenty of New Balance margarine.

I have also added chopped onions and Mrs. Dash for a touch of flavor and have plans to add onions, green peppers, jalapeno peppers and dried tomatoes for a salsa type flavor in the future.

I use a Pyrex 2 quart baking pan and it fits nicely into my Ninja Foodie Air Fryer/Oven
