1 c. Vegetable Oil
2 c. Sugar
4 Eggs
4 Bananas
4 c. Flour
1/2 t. Salt
3 T. Lemon Juice
2 t. Baking Soda
1 c. Chocolate Chips

Directions:
Directions:
Cream oil and sugar. Add eggs and bananas. Then add flour and salt. Make a small divot in the center and add baking soda. Add lemon juice. Fold in chocolate chips. Bake for 1 hour at 350º. It makes 2 loaves or a bunch of cupcakes.

This was a 4-H purple winning recipe. Not the healthiest muffin recipe out there, but delicious none-the-less. It makes 2 loaves of bread and I don't know how many muffins. It is a great way to get rid of those over-ripe bananas.
