Mix 1
3/4 c. Flour
1/4 c. Cornstarch
1/2 t. Salt
1/2 t. Baking Powder
1/4 t. Baking Soda

Mix 2
3/4 c. Buttermilk (3/4 c. Milk and 1/4 c. Lemon Juice)
1/4 c. Milk (unless you use the buttermilk substitute)
6 T. Vegetable Oil
1 Egg Yolk

Mix 3
1 Egg White
1 T. Sugar
1/2 t. Vanilla

Optional: 3 T. Cocoa, 3 T. Sugar, and 1/2 cup of Mini Chocolate Chips.

Mix 1 combines the dry ingredients. Mix two combines the liquid ingredients. Blend them together. Whip mix three on high with the mixer until it is frothy. Slowly fold into the batter. Cook on a hot waffle iron. If you want Chocolate Waffles mix the Mini Chocolate Chips with the Cocoa and Sugar. Then blend into the waffle batter.

Cindy sent me this recipe when Kelly and I were first married. It is by far the best waffle recipe. They always come out perfect. Kelly likes them plain and I love the chocolate, so I usually make the first 3 plain then add 2 T. Cocoa, 2 T. Sugar, and 1/4 c. of Mini Chips for the last 3. I highly recommend topping the chocolate waffles with raspberry jam or peach syrup.
