4 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 to 1 teaspoon curry powder
2 tablespoons minced onion
1 tablespoon lemon juice
3/4 cup milk
1/4 cup cream (can sub 1 cup evaporated milk for the milk and cream mixture)
1 cup chicken stock
2 cups diced cooked chicken

1 cup uncooked rice (long grain preferable)
2 1/4 cups liquid (chicken stock or use chicken bouillon cube)
1 teaspoon salt

Directions:
Directions:
Melt butter, remove from heat. Blend flour, salt, pepper and curry powder - slowly stir in chicken stock, milk, cream, lemon juice and minced onion. Return to heat and boil until thickened, stirring constantly.

Add 2 cups diced chicken, cook until heated through.

Put rice in casserole, pour liquid over rice and cover. Cook in oven for about one hour at 350º

Pour curried chicken over rice and keep hot until ready to serve.
