3 cups self-rising flour
1 1/2 cup sugar
1/4 tsp salt
1 tsp baking soda
3 tsp cinnamon
1 1/2 cup vegetable oil
4 eggs
3 cups grated carrots
1 cup chopped walnuts or pecans

Preheat oven to 350 degrees.
Grease and flour 3 (9-inch) cake pans.
Beat oil and sugar togehter in mixing bowl. Add and beat 1 egg at a time. Stir in carrots. Sift together, flour, salt, baking sodaand cinnamon. Add these dry ingredients to the carrot mixture and fold in to moisten. Mix well (about 2 minutes). Pour into prepared cake pans. Bake for 25-35 minutes, depending upon the oven and type of pans used. Cool. Ice with cream cheese icing, sprinkling nuts on top of each layer and sides if desired.
