Pudding:
¾ c. granulated sugar
⅓ c. all-purpose flour
1 dash of salt
3 egg yolks
2 c. milk
½ tsp. vanilla extract
35-45 vanilla wafers
5-6 ripe bananas

Meringue:
3 egg whites
½ tsp. cream of tartar
¼ c. granulated sugar

Pudding:
Combine sugar, flour, and salt on top of a double boiler. Stir in egg yolks; blend well. Cook uncovered, over boiling water, stirring constantly until thickened. Remove from heat, add vanilla. Layer mixture, bananas, and Nilla wafers.

Meringue:
Beat room temperature egg whites with an electric mixer, add cream of tartar \, and a couple tsp. of granulated sugar as the mixture begins to form a cream and continue this process until ¼ c. of sugar is used. Continue beating until the meringue can hold stiff peaks.
Add meringue to the top of the layered pudding, banana, and cookies. Be sure to push the meringue into the edges of the pan to "seal' it, this prevents shrinking.

Place pudding in 350º oven for 5-10 minutes or until the tips of the peaks on your meringue are golden brown.
