1 1 1/2 pound cooked lobster meat removed.1/4 cup chopped cilantro juice of 1 lime olive oil 2 seeded tomatoes diced 1 jalapeno pepper finely chopped with seeds 1 finely chopped shallot 1 cup cooked corn or 1 gar corn relish 1 ripe avocado 4 fresh tortillas 1/4 head chopped iceberg lettce

In a bowl add lobster 1/2 lime juice 1/2 of cilantro salt and pepper In another bowl add the rest of cilantro, tomatoes, shallots jalapenos, corn. sprinkle with olive oil salt and pepper and toss. Peel pit and cut into slices pour remaining lime juice over. heat each side of tortilla in a pan 30 seconds per side. On a plate put the mixture on with sliced avocados and roll up
