1 tbsp Jalapeno pepper minced 1/4 cup finely chopped shallots 1 tsp ground black pepper 1/2 cup dry white wine 1/2 cup champagne wine vinegar 2 tsp fresh chopped cilantro 1 lemon

Directions:

Combine all but lemon in a bowl mix well. Cut 8 wedges of lemon served with an oyster spoon over mignonette.

A nice twist other than a cocktail sauce. If you want a sweeter sauce exclude the heat of the pepper and use rice wine vinegar instead of wine.
