4 Boneless Chicken breasts
6 T flour , divided
11/2 t salt
11/2 t pepper
1 t thyme
1 T olive oil
1 3/4 c chicken broth
6 oz fresh mushrooms sliced

Serve with Mashed Potatoes

To Prepare for freezing bag in quart size bags:
1. Bag chicken
2. Bag Chicken Broth
3. Bag mushrooms
4. Bag in snack size baggie Flour, 1t salt, 1t pepper & 1 t thyme
Put all baggies together in large freezer bag

Thaw in refrigerator. Preheat oven to 350º. Roll chicken in 3 T flour mixture. Reserve 3 T flour mixture. On the stove top, brown chicken in a 5 quart Dutch oven with 1 T oil. Set chicken aside. Brown flour in same Dutch oven. The flour is pretty dry while browning. Slightly, Warm the chicken broth and whisk it into browned flour to create a thick gravy. Add mushrooms and 1/2 t salt & 1/2 t pepper. Add chicken back to the dutch oven cover it with the gravy. Put the Dutch oven covered with a lid in the preheated oven and bake 30 minutes. Serve with mashed potatoes.

I always love to use my Le Creuset dutch ovens. They make such a nice serving dish and the food is tender and juicy.

This recipe can be doubled and made in the 10 qt Le Creuset for a large crowd.
