1 15 oz can chickpeas, rinsed
1 cup carrots, cut into matchsticks
4 scallions or onion, chopped
1/3 cup dates
1/3 cup raisins or dried cranberries
1 bunch flat leaf Italian parsley, no substitute, chopped

Dressing:
1/3 cup olive oil
2 Tablespoons lemon juice
1 Tablespoon honey or maple syrup
1/2 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon chili powder

Directions:
Directions:
Boil 1 cup water for the quinoa. Add pat of butter and salt to the water and 1/2 cup quinoa. Simmer for 15 minutes, covered. Let cool.

Combine the ingredients for the salad dressing. When quinoa is cool, combine rest of ingredients with quinoa and pour dressing over all.
