Granny's Coconut Cake Recipe

Cake:
Yellow cake mix
12-14 ounce frozen sweetened coconut

7-Minute Icing:
3 egg whites
2 ¼ cups sugar
7 ½ Tbsp. water
½ tsp. cream of tartar
1 tsp. vanilla

Directions:
Directions:
Bake yellow cake mix as directed in 3 layers. Allow coconut to thaw while the cake is baking.

To make icing, you will need a large double boiler or you can just put a large boiler inside a larger pan of boiling water.
Put egg whites, sugar, water and cream of tartar in top part of double boiler and beat until well mixed.
Place over rapidly boiling water and continue beating with a hand mixer while it cooks for 7 minutes or until frosting will stand in peaks.
Remove from heat, add vanilla and beat until thick enough to spread (you may not need to beat it anymore after removing from heat)
Spread icing on each layer and then top with frozen coconut (between layers and on top). It will be a little sticky but when it cools it will be fine.
