Pudding:
Vanilla wafers to line 9 x 13 or other large size baking dish
Several ripe bananas
2-3 egg yolks
1 tsp. cornstarch or flour
½ - ⅔ cup sugar
1 ½ - 2 cups milk
1 tsp. vanilla

Meringue:
4 egg whites
¼ cup sugar
¼ tsp. cream of tartar

Directions:
Directions:
Line baking dish bottom and some on the sides with vanilla wafers.
Slice bananas and place on top of vanilla wafers to cover all of them.
Cook pudding in a double boiler, stirring often, as follows:
Beat egg yolks and then add the cornstarch and sugar, mixed together.
Add milk and vanilla and cook, stirring often until thickened.
Remove from heat and allow to cool for a few minutes before pouring over bananas.

Meringue:
Allow egg whites to come to room temperature and place in very clean mixing bowl. Beat egg whites until glossy and smooth and then add cream of tartar.
Add sugar gradually, about 1 Tbsp at a time, beating after each addition until stiff peaks form.
Spread on top of pudding and bake at 350º about 4 inches from the heating element for about 10 minutes or until golden. Watch it carefully to prevent burning.

Granny made this pudding for years but in later years she started making instant banana pudding using Cool Whip. Because this is a cooked recipe, the bananas will turn dark if it is kept and refrigerated for long so it is best eaten on the day it is prepared. The instant type of banana pudding is not cooked so the bananas will not turn dark as quickly.
