4 eggs, beaten
⅔ cup sugar
½ cup butter or margarine (1 stick)
1 cup cooked rice
3 cups milk, scalded
1 ½ tsp. vanilla
¼ tsp. lemon extract (or more to taste)
⅛ tsp. salt
⅛ tsp. nutmeg

Directions:
Directions:
Cream sugar and butter in large mixing bowl.
Add beaten eggs.
Add rice and mix slowly so butter is thoroughly mixed.
Add scalded milk, vanilla, lemon and salt.
Pour into buttered baking dish and sprinkle with nutmeg.
Set in a pan of warm water and bake at 325º 1 hour and 25 minutes.
Test with knife as for custard.
