2/3 c. buttermilk
6 lbs of cut up chicken or 8 breast halves
1 c. of cornflakes
1 c. all purpose flour
2 (1 oz.) envelopes dry ranch dressing
cooking spray

Directions:
Directions:
Cover a large cookie sheet with heavy duty aluminum foil. Pour buttermilk into a shallow glass/plastic container. Add chicken, and turn to coat. Let chicken soak in buttermilk for 5 minutes. Combine cereal, flour and dry dressing mix in blender. Cover and blend until it is a coarse powder. Pour powder mixture into a large resealable plastic bag. Remove chicken from buttermilk (discard milk). Place chicken pieces in cereal mixture. Seal bag and shake to coat. Spray cookie sheet with cooking spray, place coated chicken pieces on it and bake for 1 hour or until juices are no longer pink when thickest pieces are cut.
