¾ lb. kale
2 T. lemon juice
¼ cup olive oil
kosher salt

Directions:
Directions:
1. Remove ribs from the kale and chop into bite sized pieces. Dress with the lemon juice, oil, and some salt. Let sit at room temperature for 1-2 hours, or in the refrigerator overnight, until the kale begins to wilt.
2. Serve as is, or with toasted pine nuts, soaked golden raisins and shaved Pecorino Romano cheese.
