Preheat 350º
1 c unsalted butter, softened
1 ½ c sugar
2 lg eggs
2 tsp vanilla

2 ¾ c flour
1 ½ tsp cream of tartar
½ tsp baking soda
1 tsp salt
1 tbsp pumpkin pie spice

¼ c sugar
1 ½ tbsp cinnamon

Directions:
Directions:
Cream butter & sugar, 4-5 min, til fluffy.
Scrape bowl & add eggs & vanilla.
Cream 1-2 min more.
Stir in next 5 dry ingredients to combine.
In small bowl, combine cinnamon & sugar.

Wrap dough & refrigerate 20-30 min.
Roll into small balls & coat WELL in sugar mix.
*Flatten center for less puffiness.* (Why?!)

Place on parchment paper-lined sheet.
Bake 9-11 min.
Cool several min on sheet before removing.
