1 deep dish pre-formed pie crust
1-1/2 to 1-3/4 cups Swiss cheese
1/2 to 3/4 cup heavy cream
2-3 eggs, depending on their size
1 cup lump crab, drained very, very well
1/2 cup medium size shrimp, cut into smaller parts and tail removed
1/4 cup chives or green onion
Dash of pepper and salt
Dash of hot sauce (optional)

Preheat oven to 350º and bake empty frozen pie shell for 10 minutes (use a fork to make holes in bottom of shell so it won't puff up when baking).

Shred cheese and 3/4 cup of cheese in bottom of the pie shell, add half of the green onions or chives.

Carefully place the crab and shrimp on top of cheese, keeping the lumps whole and shrimp distributed evenly. Place the remaining cup of cheese, green onions or chives on top of seafood. Add hot sauce if you like. Beat eggs and add the heavy cream and pour over the pie.

Bake at 400º for 10 minutes and then drop temperature to 350º for 35 minutes. Quiche should be "set" after the 45 minutes, use a toothpick to test that it is done. Let the quiche stand for about 10 minutes before serving.
