3-4 over-ripe bananas, mashed
1 egg
1/2 cup vegetable oil
1/2 teaspoon vanilla
1 cup sugar
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 Tablespoons whole milk
1 cup chocolate chips
1/4 cup walnut pieces (optional)

Directions:
Directions:
Preheat oven to 325º. Spray cupcake pans or 1 9 x 5 loaf pan with cooking spray. Mix together oil, egg, vanilla, milk, sugar and bananas in a bowl. Stir in flour, baking soda, salt and chocolate chips.

Pour mixture into loaf pan and bake for 45-55 minutes depending upon your oven or until a toothpick come out clean when used for testing. OR

I prefer making muffins, and using 1/4 cup of batter for each muffin and baking them for 30 minutes or until a toothpick comes out clean.
