1 cup Apricot preserves (do not use jam)
1 cup mustard - Dijon or honey mustard work best
1 cup chili sauce (not ketchup)
4 chicken breasts (can use 6 or 8 thighs or a whole cup up chicken)
4 large carrots (cut julienne)
rice or riced cauliflower

Directions:

Preheat oven to 375º
Place chicken in glass 13X9 baking dish
Place carrots around chicken
Mix apricot preserves, mustard and chili sauce together and pour over chicken and carrots.

Bake for about 35 - 45 minutes until chicken is done.

Serve over rice or cauliflower.

This recipe can be easily halved or doubled. The glaze can be used as a bbq glaze instead of in the oven. The carrots can be eliminated from the recipe.
