2 lbs. boneless skinless chicken breasts
1/2 c. flour
salt
pepper
2 T. butter
2 T. olive oil
1 c. orange juice
1 t. Dijon mustard
1/4 c. dried cranberries

Directions:
Directions:
Slice each breast into two thin fillets. Season each side with salt and pepper, then dust with flour. Heat large skillet on medium heat and add butter and oil. Place chicken breasts in skillet and cook until first side is golden brown--about 5 minutes. Turn and cook the other side about 3 minutes. Mix orange juice and Dijon mustard together. Pour orange juice/mustard mixture over chick and scrape up browned buts. Bring to a boil. Add cranberries and turn down heat. Simmer until mixture thicken and chicken is done--approximately 5 minutes. Serve over rice.

I got this recipe from a Women's Group activity for Western Grove Christian Church. The chef made enough for the whole group. After browning the chicken, she finished cooking it in the oven while she made her rice and veggies. She cooked it at 375 for about 20 minutes and then pulled the chicken out of the sauce and reduced the sauce on the stove.
