1 medium onion, finely chopped
½ cup celery, finely chopped
½ cup red pepper, finely chopped
2 garlic clove, minced
2 -3 tbs Worcestershire sauce
2 cups cooked black beans, drained and rinsed
1 tsp ground cumin
1 tsp ground coriander
3 cups cooked white rice
2 tbs cooking oil
garnish with sliced green onion &/or chopped fresh cilantro

4 eggs (fried or scrambled to serve on the side)

Directions:
1. Heat oil in heavy frying pan. When hot, add onion, clery and bell pepper until slightly golden brown. Add beans, stirring gently. Allow mixture to dry.

2. Mix in rice and add worchestire sauce, salt and pepper. Serve hot with fried or scrambled eggs on the side.
