4 chicken thighs
2 medium carrots, julienned
1 red pepper, deseeded and thinly sliced
2 cups basmati rice
1 tablespoon olive oil
Salt and pepper to taste
2 tablespoons red curry paste
1 garlic clove, minced
1 teaspoon ginger paste
1 cup chicken broth
1 cup coconut milk

Directions:

Select saute on the pot, and set to medium high. Heat pot.

Add the olive oil to the pot. Season the chicken with salt and pepper, and cook on both sides in the oil until brown, about 5 minutes. Transfer to a plate, and set aside.

Add the carrots and bell pepper, and cook until softened, about 5 minutes. Stir in the curry paste, garlic, and ginger paste. Cook until fragrant, about 30 seconds.
